BREWING METHODS
Directions to Brew Coffee using Coffee Filter
Add 40 grams of coffee powder in the filter, Place the plunger gently on the coffee powder bed.
Pour 200 ml of boiling water over the plunger and cover the lid.
After 15 mins, decoction will be collected in the filter.
Mix desired amount of decoction with hot milk and sugar to taste for rich filter coffee experience.
Directions to Brew Coffee using Moka Pot
Fill the base of your moka pot with hot water up to the line marked or in the ratio 1:5 (coffee powder: water). Moka pot takes less time to brew when filled with hot water.
Fill the funnel with coffee powder loosely and place the funnel in the base.
Make sure the rim of the moka pot is clean and then put the pot together.
Place the moka pot on the burner (low flame).
Turn off the heat supply once the water starts spurting. It will continue brewing until all the water has moved up.
Decoction gets collected in the upper chamber.
Mix desired amount of decoction with hot milk and sugar.
Directions to Brew Coffee using Percolator
The basket/upper chamber is filled with the coffee powder and lower chamber with the water. This device uses a small amount of pressure to continuously brew the coffee as long as the percolator is in contact with the heat source.
The boiling water rises up the straw and drops over the coffee powder bed initiating brewing.
Unlike Moka Pot, Percolators don’t collect the brew. The brewed coffee drains through the filter and gets reheated and is sent back up the straw and re-brews. Thus letting you to stop the process when the coffee is right for you.
Directions to Brew Coffee using Electric Drip Brewer
Fill the mesh/basket with 6 tablespoons of coffee powder and prepare a uniform bed.
Pour 150-200 ml of cold water into the water dispenser. Depending on your choice of consumption.
Some Electric Drip Brewers start brewing automatically while some have manual time setting.
Decoction gets collected in the thermal carafe. The brewed coffee is never reheated.
BEAN TO CUP
SORTING
This coffee has taken an amazing Journey to reach your cup. The ripe cherries are stripped off the branch and selectively picked. The first step of Quality Check takes place at the Estate level. The green/unripe beans, low quality ones, defective and insect damaged cherries, twigs, leaves if any are removed.
SUN DRYING
Coffee can be processed by dry method (unwashed coffee) or wet method (washed coffee). In the Dry method, the cherries are laid out and dried under the sun for 2-3 weeks. They are turned by rakes several times a day to ensure even drying. They are later transferred to hulling machines for removal of the dried husk, parchment and the silver skin.
In the Wet method, the cherries are introduced into Pulper to remove the outer skin and pulp of the bean. The berries are then subjected to fermentation in tanks, for 12-24 hours. They are later washed in constantly changing clean water. After washing, they are drained and dried for a shorter period. They are later transferred to hulling machines similar to Dry method.
ROASTED BEANS
The art is to find a perfect balance of roasting to bring out the best out of bean. When the green coffee beans are roasted, they undergo physical and chemical transformations resulting in extraction of bean’s truest flavor and aroma. The art of roasting is highly subjective. Types of roast (light, medium, dark) varies in according to different types of coffee and the preferred brewing methods.
COFFEE
The roasted coffee beans must then be ground to extract the decoction. The grind size depends on the brewing method and the type of coffee; the coffee enthusiasts love to consume. We have come up with 2 different blends in a way to achieve happiness and freshness in each sip.
